Main Ingredients
  • 2 cups cooked fried chicken, shredded
  • 8 small corn tortillas Warm in a skillet before serving
  • 2 cups corn kernels, grilled or roasted Fresh or frozen corn can be used
  • 1 cup shredded cabbage
  • 1 ripe avocado, sliced
  • 1/2 cup cotija cheese, crumbled Feta can be used as a substitute
  • 1/4 cup fresh cilantro, chopped
  • 1 unit lime, juiced For serving
  • to taste Salt and pepper
For Jalapeño Lime Ranch
  • 1/2 cup ranch dressing
  • 1 unit jalapeño, seeded and finely chopped
  • 1 tablespoon lime juice
  • to taste Salt Adjust according to preference

Method
 

Prepare the Jalapeño Lime Ranch
  1. In a bowl, mix the ranch dressing with the jalapeño and lime juice. Season with salt to taste. Set aside.
Warm the Tortillas
  1. Warm the corn tortillas in a skillet over medium heat.
Assemble the Tacos
  1. For each taco, layer the shredded fried chicken, corn, cabbage, and avocado on a tortilla.
  2. Sprinkle with cotija cheese and cilantro, then drizzle with Jalapeño Lime Ranch.
Serve
  1. Serve immediately with lime wedges on the side.

Notes

These tacos can be customized with other toppings like salsa or jalapeño slices.
